Dry Ingredients
- 1/2cupGluten-Free Oat Flour
- 1/4cupRice Flour
- 2tbspAlmond Flour
- 2tbspDark Cocoa Powder
- Baking Powder
- Salt
Wet Ingredients
- 2tspCoconut Oil, melted
- 1tbspHoney
- 1pieceLarge Egg white
- Almond Milk
Filling
- Chocolate Hazelnut Spread or Chocolate Cashew Butter
How to make Gluten-Free Chocolate Sandwich Cookies
Preparation
Preheat oven to 355 degrees F (180 degrees C).
Mixing the Dough
In a large bowl, mix together the Gluten-Free Oat Flour, Rice Flour, Almond Flour, Dark Cocoa Powder, Salt, and Baking Powder.
Add the Coconut Oil, Honey, and the white of the Egg and mix them together.
Add just enough Almond Milk for the mixture to come together into a soft dough.
Wrap up the dough in plastic wrap and refrigerate it for 30 minutes.
Shaping the Cookies
With a rolling pin, roll out the dough between parchment paper until it's 3-5 mm in height.
Cut out 12 pieces of dough with a cookie cutter, then use a smaller cutter to cut holes in the center of half of the circles.
Baking
Bake in the preheated oven for 15 minutes.
Assembling the Cookies
Let the cookies cool down completely.
Drop a teaspoon of the Chocolate Hazelnut Spread on the whole circles.
Stack the rings on top of each circle, and serve.
Tips & Tricks
Ensure the dough is well chilled before rolling to make it easier to handle.
Use parchment paper to prevent the dough from sticking to the rolling pin.
