- 8ozfettuccine pasta
- 2tbspolive oil
- 4piecebacon, chopped
- 1cupfrozen peas
- 2cupsfresh spinach
- 3clovegarlic, minced
- 1/2cupgrated Parmesan cheese
- 2piecelarge eggs
- Salt and pepper to taste
How to make Easy Pea & Spinach Carbonara
Cook the fettuccine pasta according to package instructions. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy.
Add the peas and spinach to the skillet and cook until the spinach is wilted.
Add the minced garlic and cook for another minute.
In a small bowl, whisk together the Parmesan cheese and eggs.
Add the cooked pasta to the skillet and toss to combine with the bacon and vegetables.
Remove the skillet from heat and quickly stir in the egg and cheese mixture, tossing the pasta constantly to prevent the eggs from scrambling.
Season with salt and pepper to taste.
