Muffin Batter
- 2pieceFarmhouse Eggs Large Brown Eggs
- 1/2cupButter
- 1/2cupGranulated Sugar
- 3/4cupUnsweetened Apple Sauce
- 1tspPure Vanilla Extract
- 1 2/3cupsAll-Purpose Flour
- 1tspBaking Powder
- 1tspBaking Soda
- 1/2tspSalt
- 1tspGround Cinnamon
- 1/4tspGround Nutmeg
Cinnamon & Sugar Topping
- 1/2cupGranulated Sugar
- 1/2tspGround Cinnamon
- 4tbspButter, melted
How to make Cinnamon Sugar Mini Muffins
Prepare Muffin Batter
Preheat oven to 400 degrees F (205 degrees C) and line mini-muffin tins with liners.
In a small mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
In a large bowl, beat the butter and granulated sugar on medium-high speed until light and fluffy, about 3 minutes. Add the eggs, one at a time, and beat until well combined.
Add unsweetened apple sauce, pure vanilla extract, ground cinnamon, and ground nutmeg, and beat just until blended.
Add half of the flour mixture at a time to your wet ingredients, whisking or stirring by hand, just until combined. Repeat with the remaining half of the flour mixture. Be gentle and do not overmix your batter.
Bake Muffins
Using a 1 1/2 tablespoon scoop, place batter in muffin liners to ensure even size and baking.
Bake for 10-12 minutes or until the tops are just starting to turn golden and the top springs back when touched lightly.
Remove from oven and allow to cool for 5 minutes.
Coat Muffins
In a separate bowl, stir together the ground cinnamon and granulated sugar until well combined.
Dip each mini-muffin upside down into the melted butter, coating the top evenly. Immediately dip and roll in the cinnamon sugar mixture.
