- 2 1/4cupsCanned Chickpeas
- 1pieceRed Onion, finely chopped
How to make Cilantro Lime Chickpea Salad
Prepare the Dressing
Place the fresh cilantro, lime juice, olive oil, garlic, Dijon mustard, granulated sugar, ground turmeric, salt, and freshly ground black pepper in a food processor or blender.
Purée until smooth. Taste and adjust the dressing with more salt, pepper, lime, or oil as needed.
Assemble the Salad
Place canned chickpeas in a large bowl.
Add finely chopped red onion.
Toss with the dressing to taste.
Taste and adjust with more salt if necessary.
