A delicious and creamy cauliflower gratin topped with Manchego cheese and toasted almonds.

How to make Cauliflower Gratin with Manchego and Almond Sauce
Preparation
Preheat the oven to 375°F (190°C).
In a large pot of boiling water, blanch the cauliflower florets for 3-4 minutes, then drain and set aside.
Sauce Preparation
In a saucepan, melt the butter over medium heat.
Stir in the flour to make a roux, then gradually whisk in the milk until smooth and thickened.
Stir in the Manchego cheese, salt, pepper, nutmeg, cayenne pepper, and garlic powder until the cheese is melted and the sauce is well combined.
Assembly and Baking
In a small skillet, toast the sliced almonds until golden brown.
Arrange the blanched cauliflower florets in a baking dish and pour the Manchego and almond sauce over the top.
Sprinkle the toasted almonds over the top of the gratin.
Bake in the preheated oven for 25-30 minutes, or until the cauliflower is tender and the top is golden brown.
Serve hot and enjoy!
Tips & Tricks
For a richer flavor, use whole milk or add a splash of cream to the sauce.
You can substitute Manchego cheese with Gruyère or Parmesan if desired.
