How to make Breakfast Burritos with Sausage and Hash Browns
Preparation
Thinly slice the scallions and dice the fire-roasted pepper. Grate the mozzarella cheese.
Cooking Sausage and Hash Browns
Heat 1 tablespoon of neutral oil in a large nonstick skillet over medium-high heat. Add the sausage patties and cook until browned and cooked through, about 5 to 7 minutes per side.

Making the Egg Mixture
In a medium bowl, whisk together half of the scallions, eggs, sour cream, salt, and black pepper.
Cut each sausage in half horizontally.
Cooking the Eggs
Reduce the skillet heat to medium-low. Add the remaining tablespoon of neutral oil. Pour in the egg mixture and cook, gently pushing the eggs from the edges toward the center until just cooked through, about 1 to 2 minutes.
Assembling the Burritos
Warm the tortillas in the microwave for about 30 seconds.
Layer a hash brown patty, 2 sausage pieces, about 1/3 cup of the eggs, 1 tablespoon fire-roasted pepper, 1 tablespoon chopped scallions, 1 slice American cheese, and 1/4 cup of mozzarella across the center of a tortilla.
Fold the bottom tightly over the filling, then fold in the sides and roll up tightly.
Browning the Burritos
Wipe out the skillet with paper towels. Place 2 burritos in the skillet seam-side down and cook over medium-low heat until golden-brown, 1 to 2 minutes per side. Repeat with the remaining burritos.
