How to make Breakfast Burritos with Sausage and Hash Browns

Preparation

  1. Thinly slice the scallions and dice the fire-roasted pepper. Grate the mozzarella cheese.

Cooking Sausage and Hash Browns

  1. Heat 1 tablespoon of neutral oil in a large nonstick skillet over medium-high heat. Add the sausage patties and cook until browned and cooked through, about 5 to 7 minutes per side.

  2. Transfer the sausage to a cutting board. Add 1 tablespoon of neutral oil and the frozen hash browns to the skillet. Cook until golden-brown and cooked through, about 5 to 7 minutes total.

Making the Egg Mixture

  1. In a medium bowl, whisk together half of the scallions, eggs, sour cream, salt, and black pepper.

  2. Cut each sausage in half horizontally.

Cooking the Eggs

  1. Reduce the skillet heat to medium-low. Add the remaining tablespoon of neutral oil. Pour in the egg mixture and cook, gently pushing the eggs from the edges toward the center until just cooked through, about 1 to 2 minutes.

Assembling the Burritos

  1. Warm the tortillas in the microwave for about 30 seconds.

  2. Layer a hash brown patty, 2 sausage pieces, about 1/3 cup of the eggs, 1 tablespoon fire-roasted pepper, 1 tablespoon chopped scallions, 1 slice American cheese, and 1/4 cup of mozzarella across the center of a tortilla.

  3. Fold the bottom tightly over the filling, then fold in the sides and roll up tightly.

Browning the Burritos

  1. Wipe out the skillet with paper towels. Place 2 burritos in the skillet seam-side down and cook over medium-low heat until golden-brown, 1 to 2 minutes per side. Repeat with the remaining burritos.

FAQS

  1. How can I make breakfast burritos with sausage and hash browns healthier?

To make your breakfast burritos healthier, consider using turkey sausage instead of pork sausage, whole wheat tortillas instead of regular flour tortillas, and adding more vegetables like spinach or bell peppers. You can also reduce the amount of cheese or use a lower-fat cheese option.

  2. What are some good substitutions for ingredients in breakfast burritos?

If you don't have certain ingredients on hand, you can substitute the pork sausage with chicken or turkey sausage, or even a plant-based sausage for a vegetarian option. Instead of mozzarella cheese, you can use cheddar or pepper jack for a different flavor. For the tortillas, corn tortillas can be a gluten-free alternative.

  3. How should I store leftover breakfast burritos?

To store leftover breakfast burritos, wrap them tightly in plastic wrap or aluminum foil and place them in an airtight container in the refrigerator. They can be stored for up to 3 days. For longer storage, you can freeze them for up to 2 months. Just make sure to reheat them thoroughly before eating.

  4. What can I serve with breakfast burritos for a complete meal?

Breakfast burritos pair well with a side of fresh fruit, a simple green salad, or some crispy hash browns. You can also serve them with salsa, guacamole, or a spicy sauce like Sriracha or gochujang for an extra kick.

  5. What is the best cooking method for making breakfast burritos crispy?

To achieve crispy breakfast burritos, cook them seam-side down in a nonstick skillet over medium-low heat until golden-brown, about 1 to 2 minutes per side. You can also brush the outside of the burritos with a little oil before cooking to enhance the crispiness.
