Ingredients
- 1cupdried beans
- 1pieceonion, diced
- 2clovegarlic, minced
- 1piecebell pepper, diced
- 2piececarrots, diced
- 1candiced tomatoes
- 4cupsvegetable broth
- 1tspcumin
- 1tsppaprika
- Salt and pepper to taste
- Fresh parsley for garnish
How to make Bean Stew
Rinse the dried beans and soak them in water overnight.
In a large pot, sauté the onion, garlic, bell pepper, and carrots until softened.
Add the soaked beans, diced tomatoes, vegetable broth, cumin, paprika, salt, and pepper to the pot.
Bring the mixture to a boil, then reduce heat and simmer for about 45 minutes to 1 hour, or until the beans are tender.
Serve the bean stew hot, garnished with fresh parsley.
