How to make BBQ Jackfruit Nachos
Preparation
Rinse, drain, and pat the young green jackfruit dry. Cut off the center core of each piece and discard.
Seasoning the Jackfruit
In a bowl, mix the dried jackfruit with coconut sugar, smoked paprika, garlic powder, freshly ground black pepper, and crushed red pepper flakes until well combined. Use clean hands or forks to pull apart bigger pieces.
Cooking the Jackfruit
Add coconut oil and seasoned jackfruit to a pan and cook on medium heat for 4-5 minutes, or until the jackfruit begins to color.
Add barbecue sauce and reduce heat to medium. Cook for 10-15 minutes.
Assembling the Nachos
Once the jackfruit is ready, evenly divide it between two plates on a bed of tortilla chips. Top with shredded Mexican cheese blend, chopped tomato, sliced avocado, and sour cream. Garnish with fresh herbs.
Tips & Tricks
For extra flavor, let the jackfruit marinate in the seasoning for a few hours before cooking.
Adjust the amount of crushed red pepper flakes to control the spiciness.
