Ingredients
Vegetables and Toppings
- 1 1/2cupsSweet Potatoes, chopped
- 3/4cupOnion, chopped
- 1/2cupBell Pepper, chopped
- 1/3cupBroccoli, chopped
- 1/3cupBarbecue Sauce
- 4tbspMozzarella Cheese

- 2pieceWhole Wheat Pita Bread
How to make Barbecue Veggie Pita Pizzas
Preparation
Preheat oven to 375 degrees F (190 degrees C).
Chop the sweet potatoes, onion, bell pepper, and broccoli.
Roasting Vegetables
Spray a baking sheet with coconut oil cooking spray.
Lay veggies out in a single layer on the baking sheet and roast for 10 minutes.
Remove pan, stir veggies, and bake for another 10 minutes or until soft.
Preparing Pita Bread
Put the whole wheat pita bread on a pan and bake them in the oven for 7-10 minutes to make them crispy. If you want a soft crust, skip this step or only bake them for 5 minutes.
Assembling Pita Pizzas
Once veggies have roasted, remove pita bread and veggies from the oven.
Top each pita bread with barbecue sauce, then add the roasted veggies, and top with mozzarella cheese.
Final Baking
Bake for another 5 minutes or until cheese has melted.
Serving
Serve and enjoy.
Tips & Tricks
For a spicier version, add some red pepper flakes to the barbecue sauce.
You can substitute mozzarella cheese with a vegan cheese alternative for a vegan version.
