How to make Balsamic Blueberry Salmon with Brussels Sprouts
Preparation
Preheat oven to 400 degrees F (200 degrees C).
Clean the salmon fillets and place them on a lined sheet pan.
Clean and quarter the Brussels sprouts. Place them on the pan with the salmon.
Sprinkle sea salt on top of the salmon and veggies. Set aside.
Balsamic Blueberry Mixture
Place fresh blueberries in a bowl and mash them slightly with a fork.
Add olive oil, sea salt, ground black pepper, fresh basil, minced garlic, and balsamic vinegar. Mix everything together.
Cooking
Drizzle an additional 2-3 tablespoons of olive oil over the salmon and Brussels sprouts.
Spoon the balsamic basil blueberry mixture over the salmon fillets.
Squeeze lemon juice on top of the salmon and veggies.
Place lemon slices on top of the veggies on the sheet pan. Sprinkle with extra black pepper.
Place in the oven and bake for 15 minutes.
Broil for an additional 1-2 minutes to make the Brussels sprouts and baked salmon skin extra crispy.
Remove from oven and plate.
