- 8slice Bread
- 4slice Aged Cheddar Cheese
- 4pieceOrganic Eggs
- 1pieceMedium Avocado, sliced
- 1cupFresh Baby Spinach
- to taste Salt
- to taste Ground Black Pepper
- to taste Smoked Paprika
- to taste Ground Turmeric
- as needed Coconut Oil Cooking Spray
How to make Avocado, Spinach, and Egg Sandwiches with Aged Cheddar
Spray a large skillet with coconut oil cooking spray and heat over medium heat.
Once the skillet is hot, lay out the bread slices and top four of them with aged cheddar cheese. You may need to do this in batches depending on the skillet size.
Top the remaining four pieces of bread with fresh baby spinach and sliced avocado. Cook for 3-4 minutes, or until the cheese begins to melt and the bread is golden brown underneath.
Meanwhile, heat a separate skillet over medium-low heat, coat with coconut oil cooking spray, and add the organic eggs, keeping them separate from one another if possible. Cook for 5-7 minutes, or until the eggs are cooked to your liking.
Sprinkle the eggs and avocado with a light layer of salt, ground black pepper, smoked paprika, and ground turmeric.
Assemble the sandwiches by adding the cooked eggs to the four slices of bread with spinach and avocado, then top with the other four pieces of bread with melted aged cheddar cheese.
Tips & Tricks
For a spicier kick, add a pinch of chili flakes to the eggs.
Use whole grain or sourdough bread for added texture and flavor.
