Mashed Avocado
- 1/2pieceavocado
- 1/8tspblack pepper
- 1/8tspkosher salt
Scrambled Eggs
- 1pieceegg
- 1piecebreakfast turkey sausage link
- 2tbspshredded, reduced-fat cheddar cheese
- 1 1/2tbspnonfat milk
- 1/4tspTabasco sauce
To Assemble
- 1piecelarge slice whole grain bread
- 1 1/2tbspreduced-fat cream cheese
- optional garnish: additional black pepper, thinly sliced chives, or a drizzle of Tabasco sauce
How to make Avocado and Scrambled Egg Toast
Prepare Mashed Avocado
In a small bowl, mash the avocado with a fork or a mashing tool until slightly chunky. Stir in black pepper and salt. Set aside.
Prepare Scrambled Eggs
In a small bowl, whisk together the egg, sausage rounds, cheese, milk, and Tabasco sauce.
Preheat a small, nonstick skillet over medium heat. Add the egg mixture and cook until the egg is just set, stirring occasionally to scramble.
Assemble Toast
Lightly toast the bread.
Spread the warm toast with cream cheese, then spread the mashed avocado mixture on top.
Spoon the warm scrambled egg mixture on top of the avocado. Garnish as desired and serve immediately.
