Mashed Avocado

  • 1/2piece
    avocado
  • 1/8tsp
    black pepper
  • 1/8tsp
    kosher salt

Scrambled Eggs

  • 1piece
    egg
  • 1piece
    breakfast turkey sausage link
  • 2tbsp
    shredded, reduced-fat cheddar cheese
  • 1 1/2tbsp
    nonfat milk
  • 1/4tsp
    Tabasco sauce

To Assemble

  • 1piece
    large slice whole grain bread
  • 1 1/2tbsp
    reduced-fat cream cheese
  • optional garnish: additional black pepper, thinly sliced chives, or a drizzle of Tabasco sauce

How to make Avocado and Scrambled Egg Toast

Prepare Mashed Avocado

  1. In a small bowl, mash the avocado with a fork or a mashing tool until slightly chunky. Stir in black pepper and salt. Set aside.

Prepare Scrambled Eggs

  1. In a small bowl, whisk together the egg, sausage rounds, cheese, milk, and Tabasco sauce.

  2. Preheat a small, nonstick skillet over medium heat. Add the egg mixture and cook until the egg is just set, stirring occasionally to scramble.

Assemble Toast

  1. Lightly toast the bread.

  2. Spread the warm toast with cream cheese, then spread the mashed avocado mixture on top.

  3. Spoon the warm scrambled egg mixture on top of the avocado. Garnish as desired and serve immediately.
