Healthy Pumpkin Reese’s Cups recipe

Ingredients

12 Servings
(1 serving = 1 piece)

For Filling

  • 1/4cup
    • natural nut butter
  • 2/3cup
    • pumpkin purée
  • 2/3cup
    • vanilla protein powder
  • 1tsp
    • cinnamon or pumpkin pie spice
  • •A few drops stevia (optional if you want sweetness closer to a Reese’s )

Outer layers

  • 1/2cup
    • sugar and dairy free chocolate chips
  • 1/2tbsp
    • coconut oil
  • 2
    •Flaky sea salt - I used @osmosalt (use code EXPLOREWELLNESS to save)

How to make Healthy Pumpkin Reese’s Cups

Initial Cup

  1. •Melt 1/2 the chocolate and coconut oil and drizzle into silicone muffin cups, moving chocolate to go up the sides. Refrigerate or freeze until solid.

Filling

  1. •Mix all your ingredients in a bowl except chocolate chips, coconut oil and salt.

  2. •Add about a tbsp of your mix into the chocolate cups and flatten.

Finishing

  1. •Cover with remaining chocolate and refrigerate to harden.

  2. •Top with some sea salt if desired and enjoy!

Tips & Tricks

  1. Alternatively, you can freeze the filling into just solid, and coat in chocolate

  2. To melt your chocolate, I recommend doing it in increments of 20 seconds mixing each time. When almost melted, just mix until throughly smooth

  3. You can omit the coconut oil, but the chocolate will be thicker and harder to coat.

    Yes, you can use any nut butter you prefer, such as almond butter or cashew butter, as long as it is natural and unsweetened.
