How to make Spicy Egg Noodles
Prepare the Noodles
Cook the noodles according to the package instructions, then drain and set aside.
Cook the Vegetables and Spices
In a pan, heat oil on medium heat.
Add cumin seeds and cardamom. Let them crackle for a few seconds.
Add the chopped onion, garlic, and ginger to the pan. Sauté until the onions turn translucent.
Stir in the curry leaves and green chillies, cooking for another minute.
Sprinkle in turmeric powder, chilli flakes, curry powder, and chilli powder. Stir well to coat the vegetables.
Toss in the sliced carrots and stir fry for 2-3 minutes until they soften slightly.
Scramble the Eggs and Combine
Push the vegetables to one side of the pan and pour in the beaten eggs on the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.
Add the cooked noodles to the pan, and mix everything together.
Sprinkle with salt and any remaining mixed spices to taste. Cook for another 2 minutes, stirring to ensure everything is well combined.
Serve
Garnish with extra chilli flakes or curry leaves if desired, and serve warm.

For extra flavor, you can add a splash of soy sauce or a squeeze of lime juice before serving.
Adjust the level of spiciness by varying the amount of chilli flakes and green chillies.
