    white wine, dry
  • 125g
    shallots, chopped
  • 375g
    salmon fillet
  • 70g
    smoked salmon
  • 75g
    chives, thinly chopped
  • 75g
    parsley, chopped
  • 75g
    dill, chopped
  • 200g
    unsalted butter
  • 250g
    white bread, toasted
  • 30g
    caviar
  • 30g
    crème fraiche
  • salt
  • black pepper

How to make Salmon and Herb Toasts with Caviar

  1. In a saucepan, bring the white wine and chopped shallots to a boil.

  2. Add the salmon fillet and poach until cooked through, about 10 minutes.

  3. Remove the salmon from the saucepan and let it cool. Flake the salmon into small pieces.

  4. In a bowl, combine the flaked salmon, smoked salmon, chives, parsley, dill, and unsalted butter.

  5. Season with salt and black pepper to taste.

  6. Spread the salmon mixture onto the toasted white bread.

  7. Top each toast with a small dollop of crème fraiche and a spoonful of caviar.
